Vaillons, Raveneau's most graceful Premier Cru, arrives from the western bank of the Serein river where limestone marls and cool exposure create wines of almost ethereal delicacy. Unlike the mineral-driven intensity of Raveneau's other 1er Crus, Vaillons expresses itself through a veil of white flowers and bright citrus—floral purity that seems to float above the wine's underlying bedrock of Kimmeridgian limestone. From vines planted three decades ago, this 2023 drinks with an almost immediate approachability despite carrying the weight and structure for 10+ years of graceful aging. The hand-harvested, naturally fermented approach yields wines without new oak influence, allowing the cool-climate Chardonnay to sing with delicate complexity. This is the Premier Cru that rewards those seeking elegance over power, minerality over extraction.

Issuing from 0.4 hectares defined by stony soils and a natural amphitheater that shields the vines from winds, it’s ample and textural, soaring from the glass to reveal a bouquet of grapefruit zest, pear and crisp stone fruit mingling with notes of beeswax and white flowers. Concentrated, layered and intense, it's supported by a bright spine of acidity and concludes with a chalky finish. "Silky, supple, and elegant, the 2023 Raveneau Vaillons has an expressive, approachable nose with fruit aromas that range from lime zest to passion fruit and aniseed. The wine is lively and crisp, but there is a softer side as well, suggestion that it should drink well young, but there is still the potential to age. The grapes are from 50-year-old vines from two parcels in Vaillons lieu-dit and one parcel in Séchet."

More about Raveneau

Undisputed greatest producer in Chablis. François established the domaine in 1948; his sons Bernard and Jean-Marie now run it. Raveneau pioneered barrel fermentation and extended lees contact in Chablis. Their Grand Cru holdings (Les Clos, Blanchots, Valmur) produce wines of mineral purity.
