Renaud Boyer trained as a mechanical engineer before taking on vines in Meursault, and he makes red Burgundy accordingly: whole clusters, an infusion-style maceration of about three weeks with nothing but hand stirring, and bottling without added sulfur since 2008. Les Prévolles is his Beaune cuvée, from roughly fifty-year-old vines on marl and clay, a site he says reliably turns out a spicy wine with a clove note. The farming has been chemical-free since 1986, back when his uncle Thierry Guyot had the vines. 2018 was warm, dry and generous in Burgundy, a vintage that rounded off the Côte de Beaune's harder edges, and at eight years this is in a good place - open, spicy, still fresh. It comes from a private cellar, and low-sulfur wines reward careful handling: serve it cool and open it not long before you pour.
