Malbec with no oak, no additions and no added sulfites - fermented and aged entirely in small clay amphorae, which is about as far from oaky Argentine Malbec as the grape gets. Kung Fu is Matias Riccitelli's hands-off range, and the fruit comes from Gualtallary in the Uco Valley, organically farmed at around 1,400 meters on chalky, calcareous soils that give Malbec a saline, mineral cut instead of sweetness. Grapes are hand-picked and moved by gravity into the amphorae, fermented on native yeasts with 50% whole clusters, then aged eight months in clay and bottled unfined and unfiltered. The result is bright, crunchy and floral, built on lift rather than extraction. Serve it with a light chill, and open it rather than cellar it.
