Nuits-Saint-Georges has a reputation for being the burly one, the Cote de Nuits village that shows up in boots rather than slippers. Les Chaignots argues otherwise. It sits at the northern end of the village, up against the Vosne-Romanee border, and it borrows the neighbor's perfume: red cherry, rose and violet over a spiced, earthy underlay, all carried on silk rather than muscle. Robert Chevillon is the reference domaine here, working old vines with a traditional hand, and 2010 was one of those classic Burgundy vintages that delivered structure, acidity and precision in equal measure. Sixteen years on, the tannins have resolved and the secondary notes — mushroom, forest floor, warm spice — are just starting to bloom, with plenty of life still ahead. Open it, give it thirty minutes, and don't waste it on a crowd.

Domaine Robert Chevillon is basically the gold standard for Nuits-Saint-Georges. The estate has belonged to the Chevillon family for generations, and today brothers Denis and Bertrand (fifth generation) make wines from eight Premier Cru terroirs plus meticulous village cuvées. Robert Parker's critic William Kelley called them 'one of my favorite addresses in all of Burgundy.' These are characterful, age-worthy, utterly Burgundian. No compromise.
