Aszú is among the most labor-intensive wines on earth. Pickers move through the vineyard berry by berry rather than bunch by bunch, taking only the grapes that botrytis has shriveled into raisins; those aszú berries are then macerated into a base wine and the result is aged at length in barrel. Six puttonyos sits at the top of the classic scale — the richest and sweetest expression of the method. Royal Tokaji has been the loudest argument for the region's own history since Hugh Johnson and partners founded it in 1990, seizing some of Tokaj's greatest plots the moment the communist state released them. Expect enormous sweetness held in check by acidity so bright it's almost startling: apricot, orange peel, honey and a savory, saffron-like note that no other sweet wine quite delivers. It will keep for decades, but there's no law against tonight.
