A German winemaker trained in Burgundy, applying minimalist philosophy to sparkling wine that historically belongs to Champagne. Carsten Saalwächter took over his family's 1853 estate in 2017 and immediately earned "Discovery of the Year" from Vinum magazine. This Brut Nature (zero dosage) strips away sugar masking, forcing the wine to speak through fruit, acidity, and mineral backbone alone. Made from Pinot Noir pressed without skin contact, it captures red fruit precision while maintaining white wine elegance. The limestone-rich soils of Rheinhessen impart chalky tension. This is natural wine's answer to traditional Champagne: equal rigor, zero compromise.

Carsten Saalwächter is being called one of Germany's most exciting young winemakers, and he runs a historic vineyard that Paul Christian Saalwächter founded in 1853. Located in Ingelheim in the Rheingau, it's on limestone-rich soils that give wines precision and complexity. Carsten makes elegant, gastronomic Burgundy-style wines from Pinot Noir and Pinot Blanc, plus slate-grown reds from Assmannshausen. Natural winemaking meets German precision.
