Congy is known in Champagne for exactly one address, Ulysse Collin, and Sebastien Girost is the argument that the village has more to give. His family has farmed this quiet stretch of the Vallee du Petit Morin, just west of the Cote des Blancs, for close to a century, selling fruit to the big houses for decades before turning to bottling their own. The Millesime is drawn from the estate's best parcels in a single year: Chardonnay from Cornabeaux, planted in 1969, and Pinot Noir from Morrettes, planted in 1990, on chalky clay-limestone soils. It is vinified and raised in older, neutral oak barrels and given extended aging as well as time sur lattes, which shows up as broader, more aromatic and more structured than his Brut Reserve. Congy may be famous for one star grower, but Girost proves there is more brilliance coming out of this village if you know where to look.
