A serious Friulian white in a 250ml can, and the fruit has a name attached: it comes from I Clivi, one of the pioneering organic growers of the Colli Orientali. Sfera works with small certified-organic farmers up and down Italy and credits each one on the back label; here the grape is 100% Ribolla Gialla from the Galea vineyard, at around 200 meters on the clay-and-limestone marl the Friulians call ponca. It is direct-pressed, fermented spontaneously, and raised on its fine lees in stainless steel with regular batonnage, which gives it texture rather than just crispness. Sulfur is minimal, a single small addition at bottling, and it lands at 12.5% alcohol. A single chilled glass that travels: beach, boat, train, picnic.
