Goblet-trained vines planted between 1932 and 1961, packed at 14,000 per hectare — nearly half again the standard Burgundian density — on gravelly limestone facing east at 250 meters. Champ Forey is one of the single-site Aligotés that made Sylvain Pataille's name: he farms and vinifies the grape exactly as a grower would treat Chardonnay, and works only with Aligoté Doré, the golden-skinned old strain rather than the high-yielding Vert. Certified organic with biodynamic practice; slow vertical pressing, ambient-yeast fermentation, 12 months in used barrels, minimal sulfur at bottling, and roughly 75 cases a year. 2021 was Burgundy's hard year — April frost, a cool wet summer and heavy mildew pressure cut the crop to a fraction of normal — but it also gave back taut, low-alcohol, high-acid whites of a kind the region hadn't made in a decade, which is exactly the register this wine already lived in. Pataille co-founded the Aligoteurs, the growers' association now more than fifty strong, on the argument that this grape is a jewel and not a garnish; here is the evidence.
