A back-vintage Cabernet Sauvignon from an unlikely corner of Tuscany — the Val Freddana hills outside Lucca, well north of the Sangiovese heartland. Valle del Sole is a small family estate run by Marco Borselli, who took over from his father Renato, converted the farming to organic in 2010 and added biodynamic practice in 2014; the vineyards sit on macigno toscano, the local sandstone, mixed with clay. Collezione Privata is the estate's varietal Cabernet, and this bottle reached us from a private cellar rather than from the winery. Very little has been published about this cuvée, so we'll be straight with you: at eleven years old it should be well into its mature stretch, with the fruit turning savory. Open it now rather than waiting on it.
