À Table: A Singular Syrah (Sans Soufre) from Clos des Mourres
Great bottles of Syrah from Cornas, Côte-Rôtie and Crozes-Hermitage have a wild grace that sets them apart. These bold, mineral wines are among our favorites to lay down in the cellar until they reach their sweet spot of smoky perfection.
But Syrah is no one-trick pony; it’s greatness isn’t confined to a handful of AOCs, nor is it limited in expression to big, tannic vins-de-garde. In fact, one of the most compelling examples of the grape we’ve tried in a long time is delightfully light, bright and chillable – and it comes not from Cornas or Crozes, but about a hundred miles away in the Southern Rhône region of Vaucluse.
The wine is called “A Table!”, and it’s produced by Clos des Mourres, a small, minimalist domaine founded in 2009 by Ingrid and Jean-Philippe Bouchet. The soils for ‘A Table’ are made of sandy loam, which the two vignerons farm organically. Certain biodynamic practices are also applied, and field work is guided by the lunar calendar.
The vitality and aromatic purity inherent in all the Clos des Mourres wines can be traced back to this meticulous farming. Traditional cellar practices play an important role as well. Fermented in stainless steel with 50% whole cluster fruit, A Table! has an added layer of freshness and approachability which makes it irresistible.
Whole cluster fermentation, where bunches of grapes are left on their stems during vinification dates back to the beginning of winemaking. Although this method may sound unrefined, the inclusion of perfectly ripened stems can actually bring finesse and a silkier tannic structure to a wine.
