What is this wine?
From the Castilla-La Mancha region of central Spain, this red is made from Monastrell (also known as Mourvèdre in France). The Tierra de Castilla designation allows producers flexibility in sourcing grapes across the region, leading to expressive, value-driven wines. Vestigium is part of the “Llámalo X” project, which highlights single-varietal bottlings that showcase Spain’s diverse grape heritage.

Organic viticulture. Bush pruned vines. Harvest is done by hand.
Vinification
The grapes are destemmed, then fermented with native yeasts in stainless steel tank. Maceration lasts until the end of alcoholic fermentation, with regular wetting of the cap. The wine is then pressed into centenarian local clay tinajas (amphora).
Aging
The wine ages in tinajas for 3 months followed by 2 monthes in used french barrels and then 6 months in bottle before release.
