Don't call it Cava. This is the experimental side of Agusti Torello Roca, an all-time Flatiron favorite and a leading light of Catalonia's sparkling revolution. Under his Anima Mundi label, he leans hard into the chalky, high-elevation, Mediterranean-cooled vineyards of the Penedes, farming biodynamically and bottling soulful, terroir-driven wines. 'Cami dels Xops' is a methode ancestrale sparkler — made in the old pet-nat style, bottled with its own ferment still finishing, so it's bone-dry, lightly fizzy, and full of personality. A fresh, salty, low-intervention bubbly to drink young and with abandon.

"The 2024 Camí dels Xops is a young and tender ancestral sparkling wine produced with 50% Xarel.lo and 50% Macabeo from vineyards in Sant Sebastià dels Gorgs on limestone soils from the Ordal Mountains. It has notes of green apples, low alcohol (11%), a low pH of 2.92 and good acidity (6.1 grams). It is clean, straightforward and tasty, with a small bubbles, freshness, saltiness and a dry finish. 22,000 bottles produced. This is disgorged after 18 months in bottle." —Luis Gutiérrez

Agustí Torello Roca created Anima Mundi as a chance to reveal the soul of Penedès through native grapes fermented in clay amfora, concrete, and neutral oak. Camí dels Xops is made via the ancestral method—primary fermentation begins in alternative vessels, completes in the bottle, natural CO2 providing the fizz. Don't call it Cava; this is something else entirely. All fruit comes from biodynamically farmed vineyards on calcareous soil, resulting in a sparkling wine with fine persistent bubbles and genuine terroir-driven intensity. This is how you make sparkling wine when you ignore everyone else's rulebook.
