Cappellano is the undisputed master of Barolo Chinato, the aromatized wine that blends aged Barolo with a secret mix of herbs, spices, and quinine. Invented in the late 19th century by the Cappellano family, their version remains the benchmark—produced in tiny quantities and never altered from its original recipe. This 2017 vintage (released from the estate’s library in 2023) has had extra time to integrate, allowing its layers of complexity to fully unfold.

Dried cherry, orange peel, and baking spices lead into a wave of clove, cardamom, and bitter alpine herbs. The Nebbiolo base, structured and refined, gives the wine depth and persistence, while the infusion of botanicals adds warmth, intrigue, and a gently bitter, medicinal finish. Unlike industrially produced Chinati, Cappellano’s is about nuance—balancing sweetness, tannin, and bitterness with incredible finesse.

Best enjoyed as a digestivo, sipped slowly after a meal or alongside dark chocolate, aged cheeses, or spiced desserts. Serve slightly chilled for brightness or at cellar temperature to emphasize its depth. A rare and historic bottle that embodies the soulful, alchemical side of Barolo.

Serralunga is extreme. No village in Barolo produces wines of greater structure and longevity. We understand that has to do with its soils, as no village in Barolo has a greater concentration of limestone.

When dealing with such a lion of a terroir, it must be tempting to find a whip that will tame the beast. For a wine-maker, that could be barriques, or short macerations, or roto-fermentors. Those are the short-cuts.

Augusto Cappellano, like his father Teobaldo before him, does not take those short cuts. Partly, that's because he is just fine with structure and longevity. That is the natural product of Serralunga's special terroir, after all. Partly, it's because Augusto's extremely high-quality farming (the family has only four hectares so they can apply their natural farming methods assiduously to each and every vine) ensures that the grapes' tannins ripen properly, avoiding any of the harsh, bitter qualities that for years many assumed were also "natural."
