Les Cocottes is the one wine where Anne-Sophie Dubois, a Fleurie producer known for Burgundian rigor, happily breaks her own rules. Born in Champagne and trained in Burgundy, she destemmed every one of her Fleuries and fermented them Burgundy-style until she began this cuvée with the 2015 vintage. Les Cocottes takes the classic Beaujolais route she otherwise avoids: whole clusters and carbonic maceration. The fruit comes from her plots in the Les Labourons lieu-dit, at 380 meters, where shallow sandy soils sit over pink granite bedrock. The estate has been certified organic since 2018. Les Cocottes comes out the spring after the harvest and is meant to be opened young and often, not hidden in the cellar. That's exactly why it has become one of our great customer favorites. (A small bonus: she draws her own labels.)

More about Anne-Sophie Dubois

Anne-Sophie Dubois makes some of the most Burgundian wines in Beaujolais: Fleurie with real structure, savor and staying power, from a grower who came to Gamay by way of Champagne and Volnay.

She grew up in a Champagne family and worked at several Champagne houses, then spent two years in Volnay with Pascal Roblet before settling in Fleurie. Her family had bought the domaine there in 1992 and rented it out; she took it over in the late 2000s. The vineyards cover about eight hectares high up in Fleurie, at 300 to 400 meters, on steep, pink-granite slopes in a natural amphitheater, including the cool, high lieu-dit Les Labourons. The vineyards are farmed organically, and she works the steep soils with a small crawler tractor.

In the cellar, the approach shifts by cuvée. Les Cocottes, the entry point, is whole-cluster and juicy in the traditional Beaujolais way, while Les Labourons and the old-vine L'Alchimiste are more structured and longer-lived. Fermentations are with native yeasts, aging is in older barrels, and the wines are bottled without fining or filtration. Light on their feet, but serious, and the top cuvées reward a few years of patience.

Roast chicken with herbs, saucisson and pâté de campagne, Lyonnaise salad with lardons and a poached egg, grilled Toulouse sausages, mushroom tart, seared salmon

Tasting Profile

Expect the bright, floral side of Fleurie: red cherry, raspberry and violet, with the juicy, lifted fruit that whole-cluster carbonic maceration brings. Light-bodied, with soft tannins and fresh acidity, it finishes clean with a light peppery edge. Think a silkier, more perfumed take on everyday Beaujolais, made for drinking young, ideally a little chilled.
