If you think of Fleurie as pretty, easy-drinking Gamay, Les Labourons is the bottle that argues otherwise. This is Anne-Sophie Dubois' flagship: the best fruit from her old-vine parcel in the lieu-dit Les Labourons, a natural amphitheater of 18 plots on a steep slope at 380 meters, where the soils are sandy and shallow over pink granite bedrock. Dubois grew up in Champagne and trained in Volnay, and she brings a Burgundian mindset to Gamay. That means fully destemmed fruit and a traditional Burgundian fermentation, a deliberate break from the whole-cluster, semi-carbonic method most of the region uses, and it gives her wines more structure and definition than typical cru Beaujolais. The cuvée used to be called "Clepsydre." She renamed it for its vineyard and gave it a new label after the estate went organic, to mark a new chapter in her winemaking. It's serious Gamay without the pretension, and well worth a light chill.

More about Anne-Sophie Dubois

Anne-Sophie Dubois makes some of the most Burgundian wines in Beaujolais: Fleurie with real structure, savor and staying power, from a grower who came to Gamay by way of Champagne and Volnay.

She grew up in a Champagne family and worked at several Champagne houses, then spent two years in Volnay with Pascal Roblet before settling in Fleurie. Her family had bought the domaine there in 1992 and rented it out; she took it over in the late 2000s. The vineyards cover about eight hectares high up in Fleurie, at 300 to 400 meters, on steep, pink-granite slopes in a natural amphitheater, including the cool, high lieu-dit Les Labourons. The vineyards are farmed organically, and she works the steep soils with a small crawler tractor.

In the cellar, the approach shifts by cuvée. Les Cocottes, the entry point, is whole-cluster and juicy in the traditional Beaujolais way, while Les Labourons and the old-vine L'Alchimiste are more structured and longer-lived. Fermentations are with native yeasts, aging is in older barrels, and the wines are bottled without fining or filtration. Light on their feet, but serious, and the top cuvées reward a few years of patience.

Perfect Pairings

Roast chicken with thyme, lentils with Toulouse sausage, duck breast with cherries, mushroom tart, or a board of saucisson and jambon persillé.

Tasting Profile

Expect the floral lift Fleurie is known for, with violet and peony over red cherry and raspberry, but with a firmer, more structured build than typical cru Beaujolais, thanks to destemmed fruit and a Burgundian-style fermentation. Old vines on high-elevation granite typically bring fine-grained tannins, bright acidity and a savoury, mineral finish. Think Gamay leaning toward red Burgundy.
