Single-vineyard Muscadet from volcanic rock — a quiet rebuke to anyone who still thinks of this appellation as bargain-bin oyster wine. Jérôme Bretaudeau farms fifteen biodynamic hectares across the southern Sèvre-et-Maine and is one of the producers leading the new wave of soil-specific Muscadets. The Gabbro bottling comes from the Clos des Bouquinardières in Gorges, planted on gabbro — an igneous rock that solidified slowly beneath the earth's surface, denser cousin to basalt. The Melon de Bourgogne is direct-pressed and rested 24 months on fine lees in underground glass tile-lined tanks, no oak in the picture. The result is a Muscadet with weight and savor: smoke, crushed stone, citrus pith, the saline grip that volcanic soils tend to deliver. Serious wine at a quietly serious level.

Born a horse trader's son in the Loire, Jérôme Bretaudeau discovered natural wine, enrolled in oenology school in Beaune, and realized conventional winemaking wasn't for him. He founded Domaine de Bellevue in Gétigné in 2001. Now certified biodynamic (Biodyvin, 2020), his vineyards are plowed by horse, his wines aged in amphorae. Muscadet, Savagnin, Chardonnay—they taste like place itself.

Built for raw bar — oysters, clams, scallop crudo with olive oil and sea salt. Also excellent with grilled sardines, sole meunière, a wedge of aged Comté, or a salt-baked branzino with lemon and herbs.

Tasting Profile

Lemon zest, green pear, white flower, wet stone, and a smoky volcanic undercurrent. Medium-bodied for Muscadet, with a lees-driven creamy texture cut by blade-edged acidity and a saline, almost flinty finish that lingers.
