Bernhard Ott's Gruner has always sizzled with intensely mineral character, and the Ried Stein bottling cranks that up to its most serious expression. Stein is the only site in the area with this exact mix of geology: Gfohler gneiss at the base, layers of red and white sand, chalk and a cap of loess, deposited eons ago by an ancient arm of the Danube. That patchwork is what gives the wine its flinty, stony bite. Ott farms biodynamically and ferments this in stainless steel, leaving it on the lees until late-summer bottling for texture without any oaky flavor. The 2021 is a fresh, classic vintage and this is a grown-up Gruner with the structure to age, not a quaffer. Decant or give it time in the glass.

More about Bernhard Ott

Bernhard pioneered organic and biodynamic winemaking in Austria after a trip to the Domaine Romanee Conti in Burgundy, where Aubert de Villaine was making the world’s greatest wines with biodynamics.

Upon his return to Austria he and fellow winemakers Johannes Hirsch and Fred Loimer established respekt-BIODYN, a community oriented group of biodynamic farmers committed to helping each other and the earth through biodynamics.

He even goes as far to make his own compost, a task most growers avoid, but which makes Bernhard giddy as a school boy when showing off his tarp covered piles. Composting may sound like a bunch of shit to some, but his heaping use of the stuff has enabled enough water retention that he doesn’t need to irrigate, even in these record breaking hot recent vintages.

Even though he’s been in charge of his 5th generation estate since 1993 (at the age of 21), he has never stopped experimenting, whether with vessels, stem and skin contact, farming techniques or different grapes. His ultimate goal has always been to prove that his single vineyards: Rosenberg and Spiegel were capable of producing world class, long lived wines.

Grüner Veltliner soars to new heights in his capable hands and even his first three tiers Am Berg, Fass 4 and Der Ott are some of the best values in Austria.

Perfect Pairings

Wiener schnitzel, roast pork loin, grilled white fish, or a creamy mushroom risotto.

Tasting Profile

Flinty, smoky stone over ripe orchard fruit and white pepper. Full-bodied and dense with savory, salty grip, fresh acidity and a long, mineral finish.

Though Boudignon has recently been generating a lot of buzz for the electrifying Savennieres and Anjou Blancs produced under his own name, he actually got his start at Soucherie, where he retains his position as winemaker.

Château Soucherie has been around as an estate since at least the 19th century, but it wasn’t until 2007, when Thibaud was hired by new owner Roger-François Begûinot, that the estate began taking the necessary steps in the vineyard and cellar required for making great wine. Viticulture has moved towards organic in recent years, and harvesting is done by hand.
