Medieval walls still stand around this vineyard—the Abbey of Sainte-Marie planted Clos Saint Jean around 590, making it one of Burgundy's oldest enclosed sites. Pillot's parcel sits at one of the highest altitudes in Chassagne, with 55+ year vines yielding immediately seductive whites: pear and apple blossom lead, followed by nutmeg and vanilla bean that feel luxurious without excess. Full and fleshy yet taut with a chalky finish, this is a white wine that tastes like history and terroir in conversation.
