Medieval walls still stand around this vineyard—the Abbey of Sainte-Marie planted Clos Saint Jean around 590, making it one of Burgundy's oldest enclosed sites. Pillot's parcel sits at one of the highest altitudes in Chassagne, with 55+ year vines yielding immediately seductive whites: pear and apple blossom lead, followed by nutmeg and vanilla bean that feel luxurious without excess. Full and fleshy yet taut with a chalky finish, this is a white wine that tastes like history and terroir in conversation.

More about Paul Pillot

Domaine Paul Pillot was founded in 1900 by Jean-Baptiste Pillot, a barrel maker who decided vines were his real calling. Paul took over in 1968, expanded into premier cru sites, and his son Thierry joined in 1999, taking over full-time in 2004. Now Thierry and sister Chrystelle are among the most exciting winemakers in Burgundy, running 13 hectares (4.5 red), farming organically, making restrained, minerally wines. They're the new stars of Saint-Aubin and Santenay.
