100% Chardonnay, but fermented wild in Pillot's large 350-500 liter barrels—a scale that prevents oak dominance while allowing the slow, complex development that makes white Burgundy age beautifully. Twelve to eighteen months on lees builds creaminess, then six months in tank allows the wine to breathe before bottling. You taste citrus, mineral, butter—but the butter is background, not theme. These aren't buttery wines; they're precise wines that hint at richness without ever tasting heavy. This is Burgundy's white philosophy: make the terroir visible, not the winemaking.

Burghound

89 points

"A super-fresh nose is comprised by notes of just sliced apple and pear trimmed in evident citrus nuances where the latter can be found on the racy, delicious and appealingly textured flavors that have unusually good depth and persistence for a regional wine. One to consider."

Antonio Galloni

91 points

"The 2023 Bourgogne Chardonnay has a taut, mineral bouquet that bursts from the glass. The palate is well balanced with a citrus entry, then quite malic in style with a bright and refined finish." —Neal Martin

Robert Parker

89 points

"Pillot's 2023 Bourgogne Blanc is lovely, bursting with aromas of white flowers and ripe apples, followed by a medium to full-bodied, fleshy palate built around chalky extract and concluding with a saline finish." —William Kelley

More about Paul Pillot

Domaine Paul Pillot was founded in 1900 by Jean-Baptiste Pillot, a barrel maker who decided vines were his real calling. Paul took over in 1968, expanded into premier cru sites, and his son Thierry joined in 1999, taking over full-time in 2004. Now Thierry and sister Chrystelle are among the most exciting winemakers in Burgundy, running 13 hectares (4.5 red), farming organically, making restrained, minerally wines. They're the new stars of Saint-Aubin and Santenay.
