Oloroso is the sherry that never sees flor — fortified high enough to kill the yeast off at the start, then left to breathe in cask for decades, concentrating as it goes. Tradicion's spends more than thirty years in American oak, with the solera averaging around thirty-five, and it carries the VORS designation Jerez reserves for its oldest certified wines. The house was founded in 1998 by Joaquin Rivero, who rebuilt his family's 17th-century sherry firm by acquiring old soleras from houses like Domecq, Osborne and Sandeman; everything is bottled by hand, without chill filtration. Production is tiny, around 3,000 bottles a year. Despite the dark color and the depth of flavor it is completely dry, so pour it in a small wine glass with a slight chill — and know that it will stay lively in the fridge for weeks.
