Grower Champagne from the Côte des Bar—Champagne's southernmost subregion. George Brocard founded the domaine in 1932; Thibaud Brocard (fifth generation) took over in 2012. 6.5 hectares across 11 parcels in Celles-sur-Ource on Kimmeridgian and Portlandian limestone. 75% Pinot Noir, 20% Pinot Blanc, 5% Chardonnay. Pressed in a traditional Coquard vertical press, vinified mainly in steel under nitrogen to minimize sulfites. Three years on lees. Red fruit, brioche, vinous and fresh.

Fifth-generation Champagne maker Thibaud Brocard inherited the family vineyards in Côte des Bar and spent five years apprenticing in Burgundy before returning to restore them. Using organic and biodynamic farming since 2012 on their 6.5 hectares, he's crafting elegant, mineral-driven Champagne from the warmer southern reaches of the region—a fresh, uncompromising take on a place most Champagne drinkers have overlooked. These wines remind you that Champagne's boundaries are arbitrary, and the best bubbles can come from unexpected places.
