A village Chablis made by a family that has been growing Chardonnay in the village for close to four centuries — and that farms its limestone with no herbicides or pesticides, ploughing to push the roots deeper into the rock. Charlène Pinson and her father Laurent own 14 hectares here, including six premier crus and a piece of the grand cru Les Clos, which means their entry-level bottling is made by people whose day job is Chablis at the highest level. The fruit comes from two parcels in the heart of the appellation, on classic Kimmeridgian marl with a southeast exposure: one sits just below Mont de Milieu, the other between Vaillons and Montmain — premier cru neighbours, village price. That Kimmeridgian is limestone packed with the fossils of a prehistoric sea that once covered this corner of France, and it is exactly what makes Chablis taste like Chablis rather than like Chardonnay from anywhere else. In the cellar the Pinsons practise what they call informed flexibility, deciding site by site between barrel and tank rather than applying one recipe to everything. For this cuvée the choice is no oak at all: indigenous-yeast fermentation and ageing in stainless steel, so the Kimmeridgian does the talking.

More about Domaine Pinson

Domaine Pinson owns 14 hectares of great Chablis vineyards in the heart of the appellation between Vaillons and Montmains. The family has been farming in the region since 1640, the vineyards were paid for long ago. 100% hand harvested grapes, no pesticides or herbicides, they plow and work the soil, pushing the vines to dig deep into the limestone bedrock.

There is no set recipe for winemaking and cellar techniques at Domaine Pinson, they treat every parcel in the way they think will best accentuate the different terroirs. Some wines are barrel-fermented, others in stainless steel tank, likewise aging takes place in a variety of vessels.

Oysters on the half shell, a plate of raw scallops with lemon, sole meunière, roast chicken with tarragon, goat cheese like Chavignol, or a simple omelette with fines herbes.

Tasting Profile

Dry white with aromas of lemon, green apple and crushed oyster shell. Light to medium bodied and lean rather than rich, with a chalky, slightly salty texture. The finish is clean and citrusy with a stony bite.
