Vincent Dampt is the son of Chablis grower Daniel Dampt (and grandson of Jean Defaix); he founded his own domaine in Milly in 2003 with parcels inherited from his family, and works the estate today with his wife Émilie. The wines are textbook expressions of the Kimmeridgian limestone-and-marl that defines the appellation: chiseled, saline, and built more on cut than on richness. The village-level Chablis 2024 sees stainless-steel fermentation and aging to keep the focus laser-sharp on terroir transparency. Expect oyster-shell minerality, lemon zest, white-fleshed orchard fruit, and that signature Chablis tension — the kind of crisp, racy white that reminds you why this corner of Burgundy has been bottled separately for centuries.

"This had been bottled just before my appointment and not surprisingly, the nose was moderately reduced. No matter, there is excellent freshness and vibrancy to the utterly delicious, sleek and detailed medium weight flavors that also flash evident minerality on the chiseled, linear and youthfully austere finale. This is also a very good villages-level Chablis and it too is very much worth your interest."

Tasting Notes & Food Pairings

Perfect Pairings

The Chablis pairing rulebook applies: a dozen oysters on the half shell, fresh crab, sole, chilled shellfish platters. Also a gorgeous match for goat cheese, fresh chèvre tarts, or a butter-poached lobster.

Tasting Profile

Chiseled and saline: oyster-shell minerality, lemon zest, white-fleshed apple, and pear over taut Kimmeridgian cut. All-steel élevage keeps the focus laser-sharp — crisp, racy, and built on tension.
