Most producers blend their village Chablis from a patchwork of sites; Patrick Piuze bottles eleven of them separately, and Courgis is the one to reach for when you want a Chablis with some flesh on it. The fruit comes from a single vineyard planted in 1937 on the left bank of the Serein, where a deeper layer of clay sits over the Kimmeridgian limestone bedrock — that clay is why left-bank Chablis tends to come out richer, and why Courgis is usually the weightiest of Piuze's village cuvées. A Montrealer who came to Burgundy in 2000, Piuze picks by hand with a team of 70 in a region where roughly 90% of the crop is machine-harvested, and he gave each of his seventeen growers a slice of the business to keep the fruit coming. The 2025 was fermented and aged in tank with 20% in barrel — a call made for this vintage rather than a house formula; earlier releases of this same cuvée saw no wood at all. Village Chablis that drinks well above its station, which is more or less Piuze's whole argument.

More about Patrick Piuze

Patrick is a micro-négociant and he has a great relationship with his sources. He buys the grapes by the parcel rather than by weight and he created a profit-sharing arrangement that keeps the growers invested in their mutual success. He is an extremely resourceful manager—we recall one harvest when rain was threatening and he promised the grape pickers a case of Jameson Irish Whiskey if they met the deadline. A compelling incentive! While Patrick is very hands on with his growers in the vineyards, he is decidedly "hands off" in the cellar. He eschews corrections of any kind: no enzymes, acidifying, chaptalization (unless absolutely necessary) etc. And he uses only neutral barrels for aging the 1er and Grand Cru.

Tasting Profile

Dry white with ripe, juicy pit-fruit aromas — white peach and nectarine — over the chalky, saline edge Chablis is known for. Rounder than most village Chablis thanks to the clay, with a clean, stony finish. The small share of barrel adds texture rather than oak flavour.
