Vinification
Direct press and selection of the first juices, cold maceration of the lees for 4-5 days before alcoholic fermentation to extract more aromas, then the juice is put into barrels. Fermentation in barrels, demi-muids and foudres. Eight months oak aging with partial malolactic fermentation.
Aging
40 months sur lattes, under cork, plus 3 months in bottle after disgorgement, no fining and light filtration, disgorgement with dosage liqueur vinified in barrels, 2g/l dosage. Disgorged February 2024
