Michel Gay et Fils earned its organic certification under Sébastien Gay's stewardship, and this rare white 1er cru from Beaune-Coucherias proves why small Burgundy producers matter. The vineyard, named for its west-facing slope ("coucherias"—toward the sunset), produces elegant Chardonnay fermented in neutral concrete and stainless steel with minimal new oak. 2019 sits among Burgundy's greatest vintages since 1865: expect bright acidity, white flowers, and stone-fruit precision that will age gracefully.

The Gay family has made wine in Chorey-lès-Beaune for five generations. Domaine Michel Gay et Fils dates from 1992, when the family estate was split between brothers Michel and François; Michel's son Sébastien took over in 2001, later joined by his brother Laurent, an enologist. They have grown it from 5.5 to nearly 15 hectares across Chorey, Savigny, Aloxe-Corton and Beaune, including Beaune premiers crus like Les Coucherias and a sliver of Corton Renardes. Elegant, structured, classic Côte de Beaune.
