Chateau du Hureau is one of the very few wine-producing chateaux in the Loire and a top name in Saumur-Champigny, run by fifth-generation vigneron Philippe Vatan and his daughter Agathe. Tuffe is their delicious entry point, 100% Cabernet Franc grown on the soft tuffeau chalk that gives the name and lends the wine its underlying minerality, fermented with native yeasts and raised in tank to keep the fruit pure. The 2010 came from a fine, structured Loire vintage, and with age this bright, sappy red has gained savory depth. Serve with a light chill.

Philippe Vatan and daughter Agathe run a fifth-generation estate tucked into the tufa limestone that borders the Loire Valley near Saumur. The Cabernet Francs are planted directly into that chalky tufa and taste like it—dark and mineral, alive with acidity, impossible to confuse with anything else. The whites are equally sharp and elegant. This is terroir speaking without softening.
