Clos du Tue-Boeuf sat at the very heart of the natural-wine movement in 1990s Paris, and Thierry Puzelat — who now runs the estate with his daughter Zoé — remains one of the Loire's great low-intervention pioneers. "La Guerrerie" is a Touraine field of old vines, mostly Côt (Malbec) with a little Gamay, farmed organically on clay and flint. Made naturally with native ferments and minimal sulfur, it's all dark berry, violets and earthy spice, with a juicy, food-friendly grip. A benchmark natural Loire red from one of the names that started it all. Serve with a slight chill.

Jean-Marie and Thierry Puzelat were making natural wine in the Loire when most people thought they were crazy. Since the early 1990s, Clos du Tue-Boeuf has been the blueprint for thoughtful low-intervention winemaking—bright, alive, sometimes unpredictable, always honest. Ten hectares in Les Montils (Cheverny) plus four rented hectares in nearby Touraine. The wines are about the fruit and the year, not the winemaker's vision. Not trendy. Just really, really good.
