This is the kind of village Burgundy you find when you go looking for excellent Burgundy at excellent value. That's exactly what Philippe Collotte's importer was doing at the Grands Jours de Bourgogne when they met him: a tall, quiet Marsannay grower with a lot of passion. Champstions is 100% Pinot Noir from 30-to-40-year-old vines on clay-limestone. The farming is old-school in the best way. The rows are plowed, chemical weedkillers are never used, yields are kept lower, and the fruit is sorted before and at harvest. Collotte also puts every terroir cuvée through the same vinification and ageing on purpose, so the differences you taste come from the place, not the cellar. Take his own advice and give it time: open it two hours ahead, or decant it.

Perfect Pairings

Beef bourguignon or Flemish carbonade (beef braised in beer), both the producer's own picks. Also good with coq au vin or roast duck. For something different, try it with a chocolate dessert, as Collotte suggests.

Tasting Profile

Expect the classic Fixin profile: dark cherry and blackberry fruit with earthy, savoury notes and a hint of spice. It's typically medium-bodied and firmer than many village Burgundies, with sturdy tannins and fresh acidity. Think of a more rustic cousin of Gevrey-Chambertin that opens up with air and finishes dry and savoury.
