This is how Alex Starey, one of our favorite South African winemakers, makes a sweet wine. At Keermont the team pinches the bunch stems with pliers while the grapes are still ripening, so the berries shrivel into raisins on the vine. In 2024, a short vintage with yields down about 30%, the whole estate had been picked by the end of February except the drying grapes for Fleurfontein. The blend is 83% Sauvignon Blanc from the Low Road block, planted in 2005 just below a spring on the farm, and 17% Roussanne from the Riverside block, planted in 2014. That spring gives the wine its name: Fleurfontein means "flower fountain." Keermont's winery building was once a plant that bottled its water. The wine was fermented slowly with native yeast and aged in Hungarian and French oak. It's properly rich at 253 g/L of residual sugar, but there's real acidity holding it together. The 375ml bottle is a good size for sharing over dessert, now or any time through 2035.

Tasting Profile

Yellow-gold, with aromas of dried apricot, lychee and pineapple plus almond, vanilla and sweet spice. Full, creamy and very sweet, with flavors of dried fruit, honey, vanilla biscuit and a touch of curry spice. A core of acidity keeps it in balance, and the finish is long, like salted caramel.
