A Grand Cru Chablis that already has several years in bottle, which is just what you want from a site built to age. Fèvre's vines are near the top of Les Preuses, where the soil is dense, compact clay over a limestone slab, some of the most structured ground among Chablis's seven Grands Crus. The name is good trivia too: it comes from "perreuse," an old word for stone, after the Roman road that once ran along the foot of the hill. If you've wondered how Grand Cru Chablis drinks once it's past its first youth, this is a rewarding way to find out.

Burghound

93 points

"This is one of the most elegant wines in the range with its cool and admirably airy and pure aromas of citrus zest, oyster shell, seashore and gentle wood nuances. The mouthfeel of the medium-bodied flavors combines volume with refinement while delivering excellent length on the balanced, stony and markedly dry finale. This is not quite as concentrated or complex as the best here but as it usually is, it's a marvelous wine of refinement and punch."

Antonio Galloni

93 points

"The 2018 Chablis Les Preuses Grand Cru is the most straitlaced and austere on the nose among Fèvre’s Grand Crus, but unlike the Valmur, intuition tells me that this is saving something for later. The palate is well balanced with a lightly spiced opening, and a little more viscous than the other Grand Crus, with that spicy leitmotif of Preuses. Good potential, but cellar this for 3–5 years." —Neal Martin

Robert Parker

94 points

"The 2018 Chablis Grand Cru Les Preuses is another beautiful wine from Fèvre, wafting from the glass with pretty aromas of orange blossom, oyster shells, citrus zest and fresh pear. Medium to full-bodied, satiny and incisive, it's ample but precise, with racy acids and an intensely saline, mineral finish." —William Kelley

Decanter

97 points

"This comes from two parcels, facing east and south-west, respectively, making a very tidy 2.5ha in total. Showing the delicate touch of one of the very best winemakers in Chablis, this is a saline, focused, wonderfully structured Preuses that has plenty of grip and acidity, sappy, bone-dry flavors and remarkable length."

Wine Spectator

92 points

"Ripe notes of peach and green plum are offset by wild herb and bitter citrus peel accents in this tensile white. It finishes on the compact side, with fine length."

Wine Enthusiast

96 points

"Funky reduction still dominates this wine's nose with yeasty fumes, but underneath bright lemon notes shine through. The palate comes in with compact concentration and bundled but buffered energy. Drive and verve are packed in 2018's generosity, with a slender, bright core that conveys mouthwatering refreshment. The chalky finish is long and fresh."

More about William Fevre

If there's a Mount Rushmore of Chablis producers, William Fèvre is firmly carved into it—just a notch below the legendary Raveneau and Dauvissat. The key difference? You can actually buy Fèvre’s wines. And drink them. And afford them.

That accessibility hasn’t come at the expense of quality. In fact, Fèvre remains the benchmark for classic, mineral-driven Chablis, made with organic farming, low yields, and a light hand in the cellar. The wines are precise and textural, with just enough flesh to balance their stony, saline core. There’s no new oak. No distracting tricks. Just terroir and tension.

Tasting Notes & Food Pairings

Perfect Pairings

Sole meunière; seared scallops with brown butter; lobster with beurre blanc; roast chicken with morels and cream; aged Comté or Gruyère.

Tasting Profile

Expect the classic Grand Cru Chablis profile: lemon, green apple and white peach over a chalky, oyster-shell minerality, with Les Preuses typically one of the rounder, more generous Grands Crus. It's medium-bodied, with firm, bright acidity and a long, salty finish, and time in bottle tends to bring out honeyed, nutty notes.
