Proof that the Torres family can do crisp and modern just as well as grand and ageworthy. This Verdejo comes from Pago del Cielo, the family's outpost near Villafranca de Duero in Rueda, where riverbed gravel and stones push the grape toward minerality. It's fermented in stainless steel and aged a few months on its lees (the 'sur lies' in the name), which gives it a little extra texture and roundness without ever weighing it down. A touch of Sauvignon Blanc rounds out the blend. Serve well-chilled as your everyday white.

Familia Torres has been making wine in Penedès since 1870, and the family, now in its fifth generation, has grown from its Catalan base in Penedès, Priorat, Conca de Barberà and Costers del Segre into Rioja, Ribera del Duero, Rueda and Rías Baixas. They've also rescued more than 50 forgotten pre-phylloxera grape varieties, proving scale doesn't have to mean sacrifice.
