Patrick Piuze has built his reputation on a single-minded obsession: bottling Chablis that speaks fluently in the language of terroir. Rather than chasing prestige parcels, he works with growers across the appellation, selecting standout plots and bottling them village-by-village—often naming the exact commune, like Chichée, to highlight just how much micro-differences matter.

The 2023 Terroir de Chichée comes from vineyards just southeast of the town of Chablis, planted on pure Kimmeridgian limestone. It’s everything fans of steely, mineral Chablis crave: green apple, lemon zest, crushed oyster shell, and that signature saline edge that lingers long after the last sip. Fermented with native yeasts and aged in used barrels and stainless steel, it strikes a perfect balance between texture and tension.

This is village Chablis with Premier Cru posture—taught, nervy, and perfectly chiseled. A must for purists, and a killer value in a world of rising white Burgundy prices.

Patrick is a micro-négociant and he has a great relationship with his sources. He buys the grapes by the parcel rather than by weight and he created a profit-sharing arrangement that keeps the growers invested in their mutual success. He is an extremely resourceful manager—we recall one harvest when rain was threatening and he promised the grape pickers a case of Jameson Irish Whiskey if they met the deadline. A compelling incentive!

While Patrick is very hands on with his growers in the vineyards, he is decidedly "hands off" in the cellar. He eschews corrections of any kind: no enzymes, acidifying, chaptalization (unless absolutely necessary) etc. And he uses only neutral barrels for aging the 1er and Grand Cru.
