Santorini's volcanic terroir produces white wine unlike anywhere else on earth. Kouloura refers to the traditional basket-trained vine system that protects against the island's fierce winds—a technique woven into the landscape for centuries. Assyrtiko, the island's signature grape, thrives in volcanic ash and pumice, developing the searing acidity and mineral salinity that define Santorini's whites. The 2023 is crisp, saline, and stony—a wine that tastes of sea air and volcanic rock. Many vines here are over 100 years old (phylloxera never reached these volcanic soils), giving the wine depth beneath its youthful brightness. Drink chilled as an aperitif, or with white fish, shellfish, and feta-based dishes.
