Domaine Henri Germain is a tightly held Meursault address now run by Jean-Francois Germain, who farms organically with very low yields, hand-harvests, and bottles with minimal intervention and little new oak. That serious white-Burgundy pedigree carries straight into the humble Aligote, the region's underdog white grape, made here from a parcel in Meursault. The 2020 was a warm, ripe vintage, so this has more flesh than your typical zippy Aligote while keeping its bright, mouthwatering acidity. It's a brilliant everyday white from a top grower. Serve it chilled.

Jean-François Germain runs seven hectares of Meursault, Chassagne-Montrachet, and Beaune from a cellar so cold it's legendary. His daughter Lucie joined in 2018, and together they're making whites (three-quarters of production) with the kind of tautness and concentration that gets allocations and whispered about in restaurants. Lutte raisonnée, hand-harvested, traditionally vinified—the Burgundy way that actually works.
