Dry Kabinett from 50-year-old vines in the Niedermenniger Sonnenberg, a southwest-facing site in the Saar's Tälchen side valley. Erich Weber began winemaking in 1981, purchasing the dilapidated Falkensteinerhof (established 1901) in 1985 and restoring it himself. Now joined by son Johannes, the estate farms 13 hectares of old Riesling vines. Iron-rich gray slate soils with quartz at 200-280 meters elevation. Hand-harvested, gently pressed, fermented exclusively with indigenous yeasts in ancient 1,000-liter oak Fuder casks. Each Fuder bottled separately. No commercial yeast, enzymes, or chaptalization.

The Webers bought this Saar estate in 1981 and decided to do everything in barrel—fermentation, elevage, everything. No tanks at all. Each Fuder gets bottled separately, a restoration of old-time practice that lets you taste the micro-variations between casks from the same site. Minimal intervention since 2021-certified organic; this is Mosel winemaking as philosophy.
