Emmanuel Lassaigne is the cult grower of Montgueux, an isolated chalk hill near Troyes that locals call the Montrachet of Champagne for the astonishing Chardonnay it grows. 'Le Cotet' is his single-vineyard bottling from the first parcel his father Jacques planted back in the 1960s, now old vines on the chalkiest, eastern edge of the hill. Farmed organically, fermented with wild yeast, kept in a solera-style reserve system, and dosed barely if at all, it's Champagne as an expression of one place and its chalk. This is the deep end of grower Champagne: wild, mineral, and singular.

Antonio Galloni

"light yellow. Musky apple and pear skin aromas are deepened by notes of chamomile and smoky lees. Tightly wound citrus zest and orchard fruit flavors expand with aeration, giving way to deeper nectarine, melon and marzipan. Toasted nut and lemon pith distinguish the impressively long, focused finish. This Champagne's blend of power and finesse is impressive." —Josh Raynolds

"Derived principally from the 2021 vintage vinified in tank and complemented by 28% of the 2020 harvest matured in oak, the latest release of the NV Blanc de Blancs Le Cotet originates from the lower-lying, chalkier sector of the vineyard in front of Lassaigne's winery, where scarcely 15 centimeters of topsoil overlay the bedrock. True to style, it also incorporates approximately 10% of already-bottled Champagnes that have been disgorged and reintegrated into tank. Disgorged à la volée in July 2025, it bursts from the glass with scents of nashi pear, lemon oil and green apple, mingling with pastry nuances and framed by youthful reduction. On the palate, it is medium-bodied, incisive and precise, with a crystalline core of fruit and ample extract, underpinned by mouthwatering acidity and culminating in a long, saline finish." —Kristaps Karklins

More about Jacques Lassaigne

Emmanuel Lassaigne, the current steward, restored credibility to Montgueux—Champagne's once-forgotten terroir at the region's edge. He ferments with native yeast only, disgorges by hand, and adds minimal sulfur. The fruit-forward, mineral-driven Champagnes he makes feel like the region's secret finally being told.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
