Chorey-les-Beaune has no premiers crus and no famous hillside — its vines sit on the gentler clay-and-limestone ground just north of Beaune — which is precisely why a bottle like this is one of the most affordable ways into properly mature red Burgundy. 2005 is what makes it work: a warm, dry year of near-flawless fruit that Frédéric Drouhin compared to 1990 for richness and 1961 for bouquet, and which gave even modest appellations the stuffing to run two decades. Drouhin destems this one completely, ferments on indigenous yeasts in small open vats, and ages it 12 to 16 months in barrel with only 20% new oak, so the wood stays out of the way. At twenty-one years it is fully resolved: the tannins have gone into the texture and the fruit has turned toward dried cherry and undergrowth. From a private cellar — drink it over the next few years rather than saving it.

The purity, delicacy and penetration of which wines from the unassumingly flat yet almost magically well-drained vineyards of Chorey are capable represent a special delight, and one will seldom encounter a better example. Bright and refreshing on the palate, light and lithe but by no means skimping on flavor concentration, this doles out abundant sweet fruit accented by cherry pit, tart fruit skin, and invigorating salty mineral notes.
