Six years in old barrels under a veil of yeast is the patience behind this Savagnin, and it gives you the Jura's most singular style: oxidative and savory, made for the table. The fruit comes from the lieu-dit Vrihou on the slopes of Voiteur, a south-facing site of grey marl with some limestone. The domaine describes those limestone layers as fine and full of fossils. Fermentation runs on indigenous yeast, and the cuvée is farmed practicing organic. Across Rolet's steep vineyards no herbicides or pesticides are used, and the soils are ploughed constantly. Désiré Rolet founded the domaine in 1942, and in 1958 his four children all chose to stay in the family business. Andrew Jefford has described it as a domaine run with great meticulousness and care, and that care shows in a wine like this. If you've been curious about sous voile Jura whites but didn't know where to start, this is a serious and honest place to begin.

"Pronounced walnuts, curry and bread dough set the stage for the deep straw-colored 2018 Côtes du Jura Savagnin, a full-bodied and concentrated oxidative Jura white. The tasty and generous 2018 terminates with very good length and a mildly nutty close. Tasted twice with consistent notes." —Nicolas Greinacher

More about Rolet

Founded in 1942 and now one of Jura's most serious voices. Domaine Rolet's 65 hectares embrace all five Jurassian grape varieties on sustainably farmed land: Chardonnay and Savagnin for whites, Poulsard, Trousseau, and Pinot Noir for reds. Hand-picked, separately vinified, wild fermented—these are wines that taste like Alpine precision without apology. Vin Jaune, Chardonnay, Poulsard, all done with quiet confidence that builds respect.

Tasting Profile

Expect the classic sous voile Savagnin profile: walnut, bruised apple, curry spice and a salty, almost briny savouriness, with hints of dried citrus peel. Medium-bodied and bone dry, it carries the grape's sharp, lifted acidity through a long, nutty finish. Think of a fino sherry's tang, but unfortified and with more weight.
