A red from Shavkapito, an indigenous Georgian grape you've almost certainly never tasted, made the ancient qvevri way. Kapistoni is a seventh-generation family winery in Kartli where Niko Chochishvili ferments and ages everything in clay vessels buried underground, no steel or oak involved. Shavkapito here delivers bright wild-cherry and strawberry fruit lifted by a peppery spice note, in a medium-bodied, food-friendly style. Limited edition and genuinely off the beaten path, this is for the drinker who wants something nobody else at the table will recognize.

Using Qvevri vessels and indigenous grapes, he produces 50,000 bottles yearly on ecologically cultivated land near Tbilisi.
