The friendliest door into one of Germany's great traditionalist cellars. This is Koehler-Ruprecht's village Riesling, blended from plots across Kallstadt—including, this vintage, a little declassified Saumagen fruit—and raised the old way in big neutral casks. 'Kabinett Trocken' here is the estate's house code for dry, but this one is dry-not-bone-dry: the roundest, most approachable wine in the dry lineup, all limestone drive softened by a welcoming mid-palate. It delivers a real taste of Kallstadt terroir without asking you to cellar it for a decade. Uncomplicated in the best sense, and built for a weeknight.
