Natural Loire Pinot Noir from a biodynamic estate with medieval roots. "Tue-Bœuf" documented since the Middle Ages; Puzelat family records date to the 15th century. Currently run by Thierry, Zoë, and Louise Puzelat. 10 hectares in Cheverny, organic conversion since 1996, Demeter biodynamic certified. La Gravotte: 1.2-hectare parcel of stony, flinty clay-limestone, vines 35-40 years old. 95% Pinot Noir, 5% Gamay. Semi-carbonic maceration, native yeast, 8 months in used demi-muids. Unfined, unfiltered, minimal sulfur at bottling only.

95% Pinot Noir/5% Gamay. Named for the site, which roughly translates to "little gravelly one", Gravotte comes from a single 1.2-hectare plot of estate vines in the 35-40-year-old range, planted on particuarly stony, flinty clay-limestone soils; it is organically farmed and harvested by hand. Typical of Tue-Boeuf reds, the whole clusters go through a semi-carbonic maceration and spontaneous fermentation with native yeasts and without sulfur in vat. Gravotte is aged around 6 months in used demi-muids and Burgundy barrels. The wine is bottled without filtration and with little to no sulfur. It is classified as AOC Cheverny.
