From one of the Loire’s benchmark biodynamic estates, Domaine de la Chevalerie’s Galichets is always about depth and texture—but in a vintage like 2015, it’s also about patience rewarded. Sourced from mid-slope, gravel-and-clay soils in Bourgueil, this 100% Cabernet Franc was vinified with native yeasts and aged slowly in large neutral casks before being released with bottle age.

Now, nearly a decade on, it shows beautifully resolved tannins, deep blackcurrant and plum fruit, and layers of tobacco leaf, graphite, and forest floor. There’s structure, to be sure, but it’s softened into something supple and savory, with a mineral thread that anchors the whole experience.

Drink it now with roasted duck, lentil stew, or aged cheeses—or simply enjoy it as a rare glimpse of Cabernet Franc with bottle age and no rush. Galichets 2015 is soulful, quiet, and complete.
