Willi Schaefer is one of the most revered names in the Mosel, known for crafting Rieslings of purity, finesse, and balance. Their 2023 Graacher Himmelreich Kabinett comes from one of the region’s most celebrated sites, where steep slopes and blue slate soils produce wines with both vibrancy and depth. The 2023 vintage highlights Himmelreich’s hallmark tension, delivering a beautifully expressive Kabinett that balances ripeness with Mosel’s signature electric acidity.

Aromas of lime zest, white peach, and crisp green apple are layered with delicate jasmine, wet slate, and a whisper of honey. The palate is effortlessly light yet intensely flavorful, with a lively interplay between sweetness and racy acidity, leading into a long, salty-mineral finish. Compared to Schaefer’s more structured Domprobst bottlings, Himmelreich Kabinett is all about openness and charm, making it irresistibly drinkable even in its youth.

"The 2023 Graacher Himmelreich Riesling Kabinett opens with substantial depth and a brilliant bouquet of wet slate. The fruit is intense but not dominating, thanks to the flintiness and savoriness of the Himmelreich terroir. On the palate, this is a mouth-filling, dense and complex Kabinett with ripe, elegant and juicy fruit intertwined with very fine phenols and an ethereal slate thread that gives this Kabinett an enormous length and animation. This will be a superb gastronomic wine after a decade of bottle age, although the 2023 already drinks beautifully today. 7.5% stated alcohol. Natural cork."

Christoph and Andrea Schaefer don't have much land (just over four hectares), but that’s not really why their wines are so hard to get. If they had twice the acreage it would still sell out many times over. The wines are just that good – and that coveted by collectors (and drinkers!) worldwide.

In fact, they're a sort of platonic ideal of Mosel Riesling. The family is one of Germany’s great traditionalist producers, doing everything old school and low tech, but making absolute pure and marvelously complex wines – the kind that are often called “filigreed.” With lots of ungrafted old vines (phylloxera doesn't do so well in the stony slate soils) they have intense minerality, but with plenty of sun on the steep, steep slopes, there’s tons of laser-focused fruit, too.
