Ribeira Sacra Mencia at its juicy, gulpable best. Abadia da Cova farms steep granitic terraces above the Sil and Mino rivers in Galicia's most dramatic wine country — slopes so vertiginous the locals call it heroic viticulture. Cepa Vella draws from 15-to-40-year-old vines and rests briefly in tank, capturing Mencia's signature lift: violet-tinged red and black fruits, a wash of wild herbs, that almost balsamic edge that makes Atlantic-influenced Mencia such a thrill at the table. Ribeira Sacra is one of those places where you can't help but wonder who was crazy enough to plant vines here first. Terraces cling to precipitous slopes above the Miño and Sil rivers, and nearly all the work is done by hand. Abadía da Cova is the Moure family's estate, begun by Baldomero Moure, who came home from Cuba and started making wine in A Cova in the 1920s. A fourth generation now carries on. Their organic Volta blends Albariño, Godello and Treixadura: salty, mineral and lively.
