A 1989 Sauternes from a First Growth estate is just the kind of bottle we like to put in front of people. Mature sweet wine from the top tier of the 1855 classification is still one of the great values in classic wine, and it's far more fun to drink than to talk about. Rabaud-Promis sits on the gentle slopes of the Rabaud hill. The vines grow in a thick layer of Pyrenean gravel over clay-sand subsoil, around a château that has stood there since the 17th century. The house farms the way great Sauternes demands: pickers go through each plot by hand in several passes, taking only the grapes that have reached the right level of over-ripeness. Today the vineyard is about 80 percent Semillon, with Sauvignon and a little Muscadelle. One bit of trivia we love: the estate says it was the first in Sauternes to protect its vines from hail with an anti-hail cannon. This is an older bottle to open for an occasion, or to turn an ordinary evening into one.

Tasting Profile

Expect the classic Sauternes profile: apricot, candied orange peel, honey and the waxy, nutty richness of botrytised Semillon. The palate is full and luscious, with lively acidity keeping the sweetness in balance. With bottle age, the style typically deepens toward crème brûlée, marmalade and gentle spice, finishing long and honeyed.
