Granite, loess
Viticulture
Organically farmed. Steep terrain, light working of the soils by winch as well as grass mowing 3-4 times per year.
Vinification
40% destemmed, 60% whole cluster. 2 week fermentation in stainless steel, remontage for one week followed by light pigeage 1x per day for the other week. The idea is to achieve elegant tannins and not too much extraction.
