Not all rosé Champagne wants to be flashy. Ponson plays it differently—old vines, organic farming, and slow, thoughtful work in the cellar. Everything’s fermented in neutral oak, aged on the lees, and left alone enough to speak clearly.

The fruit comes from 1er Cru vineyards in the Petite Montagne, where Chardonnay, Pinot Noir, and Meunier each get a turn. A splash of still red wine adds color and subtle depth, but this isn’t a plush, fruit-bomb style. It's all restraint—delicate red fruit, cool minerality, and the kind of texture that comes from time and patience, not tricks.

The bubbles are fine. The fruit’s clean. The finish hangs around just long enough to make you want another sip.

You could serve this as an aperitif. But don’t stop there. It’s got enough grip for cured meats, enough brightness for raw fish, and enough class to hold its own at the center of the table.

A Champagne for people who appreciate the details. Not loud, not flashy—just really well made.
